Gastroenteritis risk from street food and lack of hygiene in Cuenca
Gastroenteritis cases in Cuenca have been increasing, particularly among those consuming street food. The primary cause is the lack of hygiene during food preparation, leading to bacterial contamination. Improper handling of ingredients, exposure to high temperatures, and environmental factors such as pollution heighten the risk of infections.
Health professionals have emphasized the urgent need for more stringent control over street food vendors and better hygiene practices. Eufrasia Fajardo, from the Agency for Regulation and Control of Sanitary Health (ARCSA), has highlighted that the public must pay attention to the cleanliness of both food vendors and their preparation spaces. ARCSA’s CALIFICA CON ARCSA campaign rewards establishments that meet sanitary standards with a certification of 100 points, which is displayed for public confidence. As of now, 104 establishments in the region have received this certification.
Experts like Maribel Merchán, a food safety advisor, stress the importance of ensuring vendors are equipped with proper knowledge and facilities. Vendors must have access to safe food storage, potable water for hand washing, and suitable equipment for hygiene.
While some argue that street food is an essential source of income for many families, others call for tighter regulation. The balance between public health and social factors is challenging but necessary to mitigate health risks. Dr. Patricio Luzuriaga, an expert in public health, explained that foodborne infections are commonly transmitted through contaminated food or improper hand hygiene. He urges the public to wash hands thoroughly before eating and after using the bathroom. If symptoms like stomach pain, fever, diarrhea, or vomiting appear, medical attention should be sought rather than self-medicating.
The increasing incidence of gastroenteritis underscores the need for better hygiene practices and stronger regulation of street food vendors to protect public health in Cuenca.
