Chef Espinosa is not a traditional chef. She studied economics and fine arts in the port city of Cartagena. After a career in advertising, she started her restaurant at the age of 35. In addition to being a chef, she is also a development worker with the FunLeo foundation. With sustainable development projects, this foundation stimulates the economies and cultural heritage of the often disadvantaged communities on which its innovative cuisine relies.
